Fried herring fillets in a cold caviar sauce
     
Ingredients:
500 g fresh herring fillets
0,2 l rye flour
  salt & pepper
1 msk butter, for frying
0,3 l sour cream
1 bunch fresh chives
250 g Swedish caviar
4 wedges of lemon
  new potatoes

Cooking:

1. Put new potatoes on the boil.

2. Rinse the herring fillets and wipe them clean. Add salt, pepper and rye flour and turn the fillets in it. Fry until golden in butter (not in oil), 2 minutes per side.

3. Mix sour cream with chopped chives and Swedish caviar.

4. Serve with boiled new potatoes and lemon.
 
 
 

This is a typical Swedish archipelago dish. Serving fried herring with new potatoes, a cold sour cream sauce, chopped chives and lemon is about as Swedish as it can get. Have this dish for dinner the first or maximum second evening.

Swedish caviar is a paste made from red caviar. It is smoother and milder than normal red caviar and comes in a tube.
